As to your other point, you apparently maintain that an employer has a right to set any requirement that he wishes to impose. Does this mean ANY requirement? What if that which he requires is illegal?
It is unlawful to require a "vaccination":

You stand a chance of violating State Law under the following:
Practicing medicine without a license.
Impersonating a medical professional.
Falsely assuming to act as a public officer.
State civil rights accessibility laws
False Imprisonment
Possibly, Disorderly Conduct, as an act may be deemed "abusive".
Harassment
Solicitation to a Felony
Conspiracy.

An employer can require employees if he believes that they could be harmful to others and thus the business. They may need to allow exemptions for those who cannot be vaccinated for medical reasons; but I am pretty confident they will win any court batter on this issue.
I had to ask an employee to voluntarily quit due to what I saw as the onset of Parkinson's disease. There were medical examinations, confirmations, and discussion on ability to do required work.

I took the vaccine that is offered after analyzing the risk of perhaps getting covid at my age. Most of the employees are a lot younger and probably dont face the severity of a covid infection. Which is why I let them make personal decisions on it.
The trails are expected to continue to 2023.
